Chai Kuik - Steamed Crystal Dumplings 菜果糕



Hurray ! This is the Chai Kuik that I have made successfully this week.
This is the recipe....

Wrapper
200g wheat starch
100g glutinous rice flour
150g tapioca flour
3/4 tsp salt
2 tbsp cooking oil
1 tsp shallot oil
550 boiling water

filling
100g pork
50g dried shrimps
500g sweet turnip
1 small piece pork lard
50g prawn
4 nos shallot

Seasoning
1 tsp salt
1.5 tsp sugar
0.25 tsp monosodium glutamate
1 tsp pepper

method


  1. 1. to make filling, heat up 3 tbsp oil to fragrant the shredded pork lard, shallots, dried shrimps, pork dices and shredded sweet turnips. add in seasoning and stir well. Remove from heat. leave to cool.

  2. to make wrapper : combine salt with boiling water. Mix flours together, then pour in salted boiling water gently and stirring constantly with chopsticks until from into a dough. Rest covered for 5 mis. Remove, add in cooking oil and shallot oil to kneed until form into smooth dough.

  3. Divide the dough into each 40g or 50g. Wrap in some filling to form a dumpling shapes. Steam over medium heat for approximately 6 mins till done. Serve hot with Chilli sauce.

Fried Sago 硕莪炒





This is favorite dish and only found in Balik Pulau.

sago - 300 g
tauge - 200 g
ku sai - 50 g
chili - according to your taste

Muffin Cake


recipe A
500 g - muffin mix flour
2 eggs
water 110g
corn oil - 140 g



Recipe B
Granted cheese 50 g
Chopped Garlic 50g
Chopped Parsley 50g


mix fo 1 min of A
Important : never use machine to spin the mix.
just use chopstick to stir.
add in oil slowly and mix in high speed for 4 mins
add in B , then mix well
bake in 180C oven for 20 mins

Cheese Cake


Here is the recipe to make cheese cake

Cake A
500g cream cheese
100g castor sugar
150g double creame
4 egg yolk
1 tbs granted lemon rind or orange juice
90g plain flour add in
300g corn flour, sifted

Cake B
4 egg whites
80g castor sugar
1 tbs lemon juice

steps
Cake A:
Beat cream cheese till smooth, add in sugar and beat till fluffy. add double cream and beat till smooth. add in egg yolks and mix well. Add in grated lemon rind and fold in sfted flour. keep aside.

Cake B:
whisk egg whites till frothy. add castor sugar and lemon juice, continue whsking till stiff.

Mix A and B together, pour into the spring form pan

Put pan into a large roasting pan half filled with hot water. Baske at 150C for 1.5 to 2 hours till golden brown and cooked.

Let cake cool in the oven with the heat off and the door ajar for about 1 hour before taking it out to prevent cracking.

Bread Bun





here the recipe

1. Bread flour 480g
2. Plain flour 120g
3. Sugar 110 g
4. Salt 10g
5. Milk powder 20 g
6. Dry Yeast 4 tsp
7. Cold egg 1 no
8. Cold water 300 ml
9. Butter 60 g

Steps

A = mix water + sugar + salt + Egg
B = miix all flour + yeast + milk powder
add B into A + butter
mix till smooth and let it expand for 30 mins (come to double the size)
then make your bun with susage or others ---> left it for 30 mins to expand to double the size.
pre-heat oven for 180 C
bake in oven for 180C for 15 - 20 mis
ready

Butter Cake












This is the Butter sponge cake that I have make
Recipe

Ingredients
250g butter
210g castor sugar
4 eggs
1 tsp vanilla essence
200g self-raising flour, sifted with 1/2 tsp salt
4 tbsp fresh UHT milk

Method
Grease and line a 20cm cake tin with greased greaseproof paper. Preheat oven to 180°C.
Cream butter and sugar until light and creamy.
Add eggs one at a time, beating (high speed) well after each addition until mixture is light and fluffy. Add essence.
Fold in sifted flour gradually to mix. Finally stir in milk.
Mix until well combined. Turn out mixture into prepared tin.
Level out mixture at the sides but allow a shallow well in the centre.
This is to enable the cake to level up evenly during baking.
Bake in preheated oven for 30–35 minutes or until cooked through when tested with a skewer.
